Instructions

  1. Cook the macaroni: Bring a large pot of salted water to a boil. Add the uncooked macaroni and cook according to package instructions, usually around 8-10 minutes. Drain and rinse under cold water.
  2. Prep the vegetables: Dice celery, red bell pepper, and red onion. Shred carrots using a grater or food processor.
  3. Mix the creamy dressing: In a large bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, and sugar. Whisk until smooth.
  4. Combine all ingredients: Add cooled macaroni to the dressing bowl. Stir gently, then mix in chopped vegetables and cheese.
  5. Taste and adjust: Check the seasoning and add salt or pepper as needed before serving.
