Peanut Butter Chocolate Chip Zucchini Bread

  • 1 cup peanut butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your zucchini by shredding and squeezing out excess moisture.
  3. Mix the peanut butter and sugar until creamy, then add eggs and vanilla.
  4. Combine the flour, baking soda, baking powder, and salt in a separate bowl.
  5. Bring it all together by mixing the dry ingredients into the wet ingredients, then folding in zucchini and chocolate chips.
  6. Prepare a 9×5-inch loaf pan by greasing or lining with parchment paper.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool in the pan for about 10 minutes, then transfer to a wire rack.

Notes
