Irresistible Summer Peach Cake

A moist and fluffy cake bursting with sweet diced peaches and layered with a delicious peach glaze, perfect for summer celebrations.

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup diced peaches (fresh or canned)
  • 1/2 cup peach preserves
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your cake pans by greasing and flouring two 9-inch round cake pans.
  3. Cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the sour cream and vanilla until well incorporated.
  6. Combine the flour, baking powder, and salt in a separate bowl, then gradually add to the wet mixture.
  7. Fold in the diced peaches gently.
  8. Pour the batter evenly into the prepared pans.
  9. Bake for about 25-30 minutes or until a toothpick comes out clean.
  10. Cool the cakes in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
  11. Prepare the glaze by mixing powdered sugar and milk to desired consistency.
  12. Frost the cake with a layer of peach preserves, then drizzle with the glaze.

Notes

For extra flavor, serve with whipped cream or ice cream. You can also add fresh fruit or mint for garnish.
