Creamy Basil Chicken Potatoes

A heart-warming dinner recipe combining creamy sauce, chicken, and flavorful potatoes, perfect for busy weeknight dinners.

  • 2 pounds Yukon Gold or red potatoes, chopped
  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup fresh basil, chopped
  • 1 cup heavy whipping cream
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon paprika
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and chop the potatoes into bite-sized pieces.
  3. Toss the potatoes with olive oil, salt, and pepper.
  4. Heat a skillet over medium-high heat and add olive oil.
  5. Season the chicken with salt, pepper, and paprika. Cook for about 5 minutes on each side.
  6. Let the chicken rest before slicing.
  7. Add minced garlic to the skillet and sauté for 30 seconds.
  8. Pour in the cream and stir to combine.
  9. Add chopped basil and simmer for about 2 minutes.
  10. Layer the potatoes in a baking dish, top with chicken, and pour the sauce over.
  11. Bake for 25-30 minutes or until golden and cooked through.
  12. Sprinkle with fresh basil before serving.

You can make this dish ahead of time and bake it when ready. Leftovers taste even better the next day!
