Firecracker Shrimp Orzo

A vibrant dish that combines succulent shrimp coated in spicy sauce with fluffy orzo, sure to delight at dinner parties or weeknight meals.

Ingredients

  • Shrimp (1 pound, peeled and deveined)
  • Orzo (1 cup)
  • Spicy Sauce (½ cup, combination of sriracha and soy sauce)
  • Garlic (3 cloves, minced)
  • Green Onions (2, sliced)
  • Fresh Cilantro (for garnish)
  • Olive Oil (2 tablespoons)
  • Salt and pepper (to taste)

Instructions

  1. Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo and cook until al dente, about 8-10 minutes. Drain and set aside. Drizzle with olive oil to prevent clumping.
  2. Sauté the Shrimp: Heat 1 tablespoon of olive oil in a skillet. Add minced garlic and sauté for 30 seconds. Add shrimp and cook until pink, about 2-3 minutes per side.
  3. Add the Sauce: Pour in the spicy sauce and let it bubble for 2-3 minutes.
  4. Combine with Orzo: Add the cooked orzo to the shrimp and sauce, tossing gently until coated.
  5. Garnish and Serve: Remove from heat, sprinkle with green onions and cilantro, and serve with lime juice.

Notes

For a creamier version, consider stirring in coconut cream at the end. You can also use other small pastas if desired.
