Meatballs (frozen or homemade)
1 cup of rice (white, brown, or jasmine)
2 cups of water
4–5 cloves of freshly minced garlic
3 tablespoons of unsalted butter
A pinch of salt
Instructions
Gather all your ingredients together.
Cook the rice: In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of rice and a pinch of salt, cover, and simmer for about 15-20 minutes. Fluff and set aside.
Heat a large skillet over medium heat and melt 3 tablespoons of butter. Add minced garlic and sauté until fragrant.
Add the meatballs to the skillet, cooking them for 8-10 minutes until golden brown.
Combine the cooked rice and meatballs in the skillet, stirring gently.
Plate up and serve, garnished with parsley or lemon juice.
Notes
Try adding red pepper flakes for a bit of heat or serve with a green salad.
