Baked Caramelized Onions and Chicken

A comforting dish of caramelized onions and tender chicken strips, baked to perfection with sun-dried tomatoes and a creamy finish.

  • 3 large yellow onions, sliced thin
  • 1 head garlic, top sliced off
  • 1/2 cup sun-dried tomatoes, chopped
  • Heavy drizzle of olive oil
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp Italian herb blend
  • 1 tbsp balsamic vinegar
  • 1.7 lbs boneless, skinless chicken thighs, cut into strips
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 cup heavy cream
  • 1 handful fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the onions and garlic by tossing them with olive oil, salt, paprika, and the Italian herb blend in a large mixing bowl.
  3. Spread the onion and garlic mixture onto a large baking dish and place the chicken strips on top.
  4. Sprinkle the chopped sun-dried tomatoes over the chicken and drizzle balsamic vinegar on top.
  5. Cover the dish with aluminum foil and bake for about 25 minutes.
  6. Remove the foil and bake for another 15-20 minutes to caramelize.
  7. Drizzle heavy cream over the dish, mix, and bake for an additional 5 minutes.
  8. Garnish with freshly chopped parsley before serving.

Notes

Serve with jasmine rice or creamy polenta to soak up the sauce.
