Beef Enchilada Casserole

This hearty beef enchilada casserole is a warm, nostalgic dish perfect for family gatherings. It’s simple to make, full of flavor, and embodies comfort food at its best.

  • 2 lbs lean ground beef
  • 10 corn tortillas, torn
  • 2 cups enchilada sauce
  • 2 cups shredded Mexican cheese
  • 1 can diced green chiles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the beef in a skillet over medium-high heat for 5-7 minutes, seasoning with salt and pepper.
  3. Drain excess grease and mix in the diced green chiles and half of the enchilada sauce.
  4. Layer a thin layer of enchilada sauce in a baking dish and cover with torn tortillas.
  5. Build layers with half the beef mixture, cheese, more tortillas, and the remaining beef and cheese.
  6. Bake for 25-30 minutes until cheese is bubbly.
  7. Let the casserole sit for 10 minutes before serving.

Notes

This casserole freezes beautifully. Just prepare it up to the baking step, cover tightly, and freeze. To bake from frozen, add 10-15 minutes to the cooking time.
