  • 1 lb beef chuck or shredded birria beef
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp chili powder
  • 1 cup Oaxaca or Monterey Jack cheese, shredded
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, for squeezing

Instructions

  1. Prep your station: Gather all your ingredients to make cooking smoother.
  2. Cook the potatoes: Heat oil in a skillet over medium heat. Add diced potatoes and cook for 10-12 minutes until crispy.
  3. Add the onion and garlic: Mix in the chopped onion and minced garlic, cooking for 2-3 minutes until fragrant.
  4. Incorporate the spices: Add cumin, oregano, and chili powder; stir and cook for an additional minute.
  5. Mix in the birria beef: Add shredded beef and combine with the potatoes and spices.
  6. Melt the cheese: Sprinkle cheese on top, cover, and cook for 3-5 minutes until melted.
