Buffalo Chicken Sushi Bake

A creamy and spicy Buffalo Chicken Sushi Bake that combines comfort food with a fun sushi twist, perfect for weeknight dinners or gatherings.

  • 2 cups short-grain sushi rice
  • 3 cups cooked shredded chicken
  • 1 cup Buffalo sauce
  • 8 oz cream cheese, softened
  • 2 cups shredded cheese (sharp cheddar and mozzarella)
  • 4 green onions, chopped
  • 4 nori sheets (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the sushi rice under cold water until clear, then cook according to package instructions.
  3. Combine the shredded chicken, Buffalo sauce, cream cheese, and half of the shredded cheese in a bowl.
  4. Spread the cooked rice in a greased baking dish, then layer with the Buffalo chicken mixture and top with remaining cheese.
  5. Bake for 20-25 minutes until cheese is bubbling and golden.
  6. Garnish with chopped green onions and let cool for a few minutes before serving.

Notes

Serve with nori for wraps or with crunchy veggie sticks. Pair with cucumber salad or sweet potato fries for a complete meal.
