Caprese Rice Skillet

A delightful Caprese Rice Skillet that brings the flavors of summer and nostalgia to your table, combining creamy rice, fresh tomatoes, mozzarella, and basil.

  • 1 cup Arborio rice
  • 23 large fresh tomatoes, diced
  • 8 oz fresh mozzarella, cubed
  • A handful of fresh basil, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the rice: In a large skillet, heat the olive oil over medium heat. Add the rice and stir it gently for about 2-3 minutes until it’s slightly translucent.
  2. Add liquid: Pour in 2 cups of vegetable or chicken broth and bring it to a gentle boil.
  3. Incorporate the tomatoes: When the broth boils, reduce the heat to a simmer. Toss in your diced tomatoes and a pinch of salt. Cover the skillet and let it simmer for about 10-12 minutes.
  4. Melt the mozzarella: Once the rice is tender, fold in the mozzarella cubes and let it cook uncovered for another 3-5 minutes.
  5. Add the basil: Remove from heat and sprinkle in the freshly chopped basil, stirring to combine.
  6. Season to taste: Adjust seasoning as needed.
  7. Serve: Mound the rice in the center of a plate and garnish with more basil and a drizzle of olive oil.
