Cottage Cheese Taco Pasta

A delightful blend of traditional pasta and zesty taco flavors, creating a comforting dish perfect for family gatherings.

Ingredients

  • Pasta (any kind you love!)
  • Ground Beef or Turkey
  • Taco Seasoning
  • Cottage Cheese
  • Salsa
  • Cheddar Cheese (shredded)
  • Fresh Cilantro

Instructions

  1. Boil the Pasta
    Bring a large pot of salted water to a boil. Once boiling, add in your pasta of choice, and cook according to the package directions until al dente.
  2. Cook the Beef
    In a large skillet over medium heat, add a splash of olive oil and toss in the ground beef (or turkey). Cook until browned, about 5–7 minutes.
  3. Add Flavor
    Stir in the taco seasoning and water to create a light sauce. Let it simmer for about 2 minutes.
  4. Combine
    Add the drained pasta to the skillet and gently fold in the cottage cheese, salsa, and half of your cheddar.
  5. Bake
    Preheat your oven to 350°F (175°C). Transfer the mixture to a greased baking dish and top with remaining cheddar cheese. Bake for about 20 minutes.
  6. Garnish and Serve
    Once out of the oven, sprinkle fresh cilantro on top. Serve warm.

Notes

For a lighter option, consider using turkey instead of beef. Feel free to add extra vegetables for added nutrition.
