French Onion Tortellini Bake

A comforting twist on the classic French onion soup, this French Onion Tortellini Bake combines rich flavors with fun tortellini for a quick and delicious meal.

  • 2 tablespoons Olive Oil or Butter
  • 2 large Onions, sliced
  • Salt, to taste
  • 1 package (about 9 oz) Cheese-filled Tortellini
  • 2 cups Chicken or Vegetable Broth
  • 1 teaspoon Fresh Thyme (or dried)
  • 1 cup shredded Gruyère Cheese
  • 1 cup additional Gruyère Cheese for topping
  • Black Pepper, to taste

Instructions

  1. Heat 2 tablespoons of olive oil or butter in a large skillet over medium heat. Add 2 sliced onions and a pinch of salt. Cook for about 15–20 minutes, stirring occasionally.
  2. Bring a large pot of salted water to a boil and cook the tortellini according to package instructions, typically about 3–5 minutes. Drain and set aside.
  3. Pour in 2 cups of broth and the fresh thyme into the caramelized onions. Bring to a gentle simmer for about 5 minutes.
  4. Combine the cooked tortellini with the onion mixture in a large mixing bowl, then gently stir in 1 cup of shredded Gruyère cheese.
  5. Transfer the mixture into a greased 9×13 inch baking dish and spread evenly.
  6. Top with an additional cup of Gruyère cheese.
  7. Preheat your oven to 350°F (175°C) and bake for about 25–30 minutes, or until the cheese is bubbly and golden.

Notes

Let the dish rest for about 5 minutes before serving, and consider garnishing with fresh thyme leaves. This dish pairs well with a crisp green salad or crusty bread.
