Creamy Miso Chicken Pasta

A comforting and rich pasta dish that combines Italian flavors with umami-packed miso for a unique culinary experience.

Ingredients

  • Fettuccine or pasta of your choice
  • Boneless, skinless chicken breast or thighs
  • Miso paste (white or yellow)
  • Heavy cream (or half-and-half, or coconut milk for dairy-free)
  • Fresh minced garlic
  • Green onions (for garnish)
  • Salt
  • Pepper

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve about a cup of pasta water before draining.
  2. Sauté the chicken: Heat a large skillet over medium heat with olive oil. Add diced chicken, seasoned with salt and pepper. Cook until golden brown, 6-8 minutes. Remove chicken and set aside.
  3. Make the sauce: In the same skillet, add more oil if needed and sauté minced garlic for 30 seconds until fragrant. Stir in miso paste and cream until well mixed; add reserved pasta water as needed for desired consistency.
  4. Combine everything: Toss cooked pasta back into the skillet along with sautéed chicken. Mix well to coat in sauce and heat through for another minute.
  5. Garnish and serve: Sprinkle chopped green onions over the dish and plate with love. Add a sprinkle of pepper or a drizzle of olive oil for extra flair.

Notes

Feel free to experiment with adding vegetables, spice, or different proteins. Letting the pasta rest after cooking can enhance its texture.
