Roasted Tomato Alfredo Orzo

A comforting dish that combines creamy Alfredo sauce with roasted tomatoes and orzo, perfect for family dinners or quiet evenings.

  • 1 cup Orzo
  • 2 cups Roasted Tomatoes
  • 1 cup Alfredo Sauce
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • Salt and Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roast the tomatoes on a baking sheet with olive oil, salt, and pepper for 25-30 minutes.
  3. Cook the orzo in boiling salted water according to package instructions, about 8-10 minutes.
  4. Sauté minced garlic in olive oil over medium heat for 1-2 minutes.
  5. Combine the roasted tomatoes and cooked orzo in the skillet with garlic.
  6. Add the Alfredo sauce and simmer for a few minutes.
  7. Season to taste with salt, pepper, or herbs.
  8. Serve hot, topped with Parmesan cheese and basil.

Notes

Top with freshly grated Parmesan and fresh basil for added flavor. Pair with a side salad or garlic bread.
