Dump-and-Bake Sausage & Rice

A comforting one-pan meal that combines smoked sausage, rice, and bell peppers, baked to perfection with a gooey layer of cheddar cheese on top.

Ingredients

  • 2 lbs sliced smoked sausage
  • 2 cups uncooked long-grain rice
  • 4 cups chicken broth
  • 1 bell pepper, diced
  • 1 tsp garlic powder
  • 1 cup cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Gather all your ingredients on the counter.
  3. Mix the sliced smoked sausage, uncooked rice, and diced bell pepper in a large mixing bowl.
  4. Add the garlic powder and pour the chicken broth over the mixture.
  5. Transfer everything into a greased 9×13 inch baking dish.
  6. Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
  7. Add the cheese on top, uncover, and bake for an additional 10-15 minutes until bubbly and golden.
  8. Serve in bowls and enjoy!

Notes

For a lighter option, use turkey sausage or a vegetarian sausage. You can also customize the vegetables based on what you have on hand.
