Dump-and-Bake Cheesy Mexican Rice

A simple, creamy, and cheesy Mexican rice dish that is easy to prepare and perfect for the whole family.

  • 2 cups uncooked rice
  • 3 cups vegetable broth
  • 1 can diced tomatoes with green chilies
  • 1 cup corn
  • 1 can black beans, drained
  • 2 cups Mexican cheese blend

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Gather your ingredients in a large mixing bowl.
  3. Mix in the vegetable broth and diced tomatoes.
  4. Add the corn and black beans, stirring until well combined.
  5. Transfer to a greased 9×13-inch baking dish.
  6. Layer the cheese on top.
  7. Cover with aluminum foil and bake for about 30 minutes.
  8. Uncover and bake for an additional 15-20 minutes until cheese is bubbly.
  9. Serve after letting it sit for 5 minutes.

Notes

Add extra garnishes such as cilantro, jalapeños, or sour cream for enhanced flavor.
