Dump-and-Bake Salmon & Vegetables

A simple yet delicious dish combining nutritious salmon with vibrant veggies, all baked together with lemony goodness.

  • 2 lbs salmon fillets
  • 1 lb baby potatoes, halved
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 1 lemon, sliced
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a baking dish with a drizzle of olive oil.
  3. Arrange the halved baby potatoes cut-side down in the dish.
  4. Season the potatoes with olive oil, salt, and pepper.
  5. Bake the potatoes for about 10 minutes.
  6. Prep the salmon fillets by seasoning them with garlic powder, salt, and pepper.
  7. Add the broccoli florets around the potatoes after 10 minutes.
  8. Layer the seasoned salmon fillets on top of the veggies and add lemon slices.
  9. Drizzle more olive oil and sprinkle with salt and pepper.
  10. Bake the dish for another 15-20 minutes until the salmon is cooked through.

Notes

Garnish with fresh herbs and extra lemon juice before serving. Customize with other vegetables as desired.
