Loaded Falafel Rice Bake

A hearty and comforting dish featuring fluffy rice, savory falafel, and creamy feta cheese, all baked to perfection.

  • 2 cups Rice (uncooked)
  • 2 cups Falafel (cooked)
  • 1 cup Feta Cheese (crumbled)
  • 2 cups Spinach (fresh)
  • 1 cup Cherry Tomatoes (halved)
  • 1 Red Onion (diced)
  • 3 cloves Garlic (minced)
  • 3 tablespoons Olive Oil
  • Spices (Cumin, Paprika, Salt, Pepper)

Instructions

  1. Rinse 2 cups of rice under cold water until the water runs clear. Cook the rice according to package instructions.
  2. Preheat your oven to 375°F (190°C).
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the fresh spinach and cook until wilted, about 3-4 minutes.
  4. In the same skillet, add another tablespoon of olive oil, then toss in the diced red onion and minced garlic, sautéing until soft, about 3-4 minutes.
  5. Transfer the cooked rice to a large mixing bowl. Add the sautéed onion, garlic, cooked spinach, cherry tomatoes, crumbled falafel, and spices. Stir gently to combine.
  6. Fold half of the crumbled feta cheese into the rice-falafel mixture, reserving the rest for topping.
  7. Transfer the mixture to a greased baking dish and sprinkle the remaining feta on top. Bake for about 25-30 minutes.
  8. Remove from the oven and let it sit for about 5-10 minutes before serving.

Notes

Garnish with fresh herbs like parsley or cilantro for added flavor. Pair with a fresh salad or hummus for a complete meal.
