French Onion Chicken

A comforting dish featuring tender chicken smothered in rich, caramelized onions and gooey cheese.

Ingredients

Scale
  • 4 boneless, skinless Chicken Breasts
  • 3 large Onions, sliced
  • 2 tablespoons Butter
  • 2 cloves Garlic, minced
  • 1 cup low-sodium Chicken Broth
  • 1 tablespoon Dijon Mustard
  • 1–2 cups Shredded Swiss Cheese
  • Fresh or Dried Thyme
  • Salt and Pepper, to taste

Instructions

  1. Caramelize the onions: Heat a large skillet over medium heat and melt the butter. Add sliced onions and a pinch of salt. Sauté for 20-25 minutes until golden.
  2. Add the garlic: Toss in the minced garlic and sauté for another minute.
  3. Deglaze the pan: Pour in chicken broth and scrape up any bits stuck to the pan. Add the mustard and thyme. Simmer for 5 minutes.
  4. Prepare the chicken: Season chicken breasts with salt and pepper. Sear in another skillet over medium heat for 5-6 minutes per side until golden.
  5. Combine the chicken and onions: Nestle the chicken in the onion skillet and pour the sauce over it. Cover and simmer for 10-15 minutes.
  6. Add the cheese: Sprinkle Swiss cheese over the chicken and cover until melted. Optionally broil for extra crispiness.

Notes

Serve with mashed potatoes or crusty bread to soak up the sauce.
