Dump-and-Bake Kielbasa Potato Bake

A hearty and flavorful bake featuring kielbasa and baby potatoes, all cooked together with savory spices and topped with melted cheddar cheese.

  • 2 lbs kielbasa, sliced
  • 2 lbs baby potatoes, halved
  • 1 onion, chopped
  • 2 tbsp olive oil
  • 1 cup cheddar cheese
  • 1 tsp smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C) and grab a large baking dish (about 9×13 inches).
  2. Add the halved baby potatoes and sliced kielbasa to your baking dish. Drizzle with olive oil, and sprinkle on the chopped onion. Toss everything until evenly coated.
  3. Sprinkle the smoked paprika over the mixture and toss again to ensure flavor distribution.
  4. Cover the dish tightly with aluminum foil and bake for 25 minutes.
  5. Remove the foil, stir the mixture, and sprinkle cheddar cheese on top. Return the dish to the oven uncovered, and bake for an additional 10-15 minutes until the cheese is melty and bubbly.
  6. Let your bake sit for about 5 minutes before serving.

Notes

Serve with a sprinkle of freshly chopped parsley and a side of green salad or roasted veggies.
