Instructions

  1. Prep the potatoes: Start by washing and peeling your potatoes. Dice them into bite-sized cubes; this aids in even cooking.
  2. Cook the potatoes: In a large skillet, heat about one tablespoon of oil over medium-high heat. Season your potato cubes with salt and pepper, then add them to the pan. Cook for 10-12 minutes, stirring occasionally, until they’re golden brown and crisp.
  3. Brown the beef: In the same skillet, push the potatoes to the side and add the ground beef. Cook until it’s no longer pink (about 5-7 minutes).
  4. Season with love: Once your beef is cooked, sprinkle the taco seasoning over it, mixing well. Add a splash of broth if things feel too dry.
  5. Combine everything: Add the crispy potatoes back to the beef mixture, mixing gently to combine. Sprinkle cheese on top and allow it to melt over low heat.
  6. Finishing touches: Once the cheese is melted, serve warm with garnishes like avocado and a dollop of sour cream.
