Peach Cream Cheese Breakfast Bake

  • 6 croissants, cut into bite-sized pieces
  • 2 cups fresh peaches, diced
  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1 cup whole milk
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your croissants by cutting them into bite-sized pieces.
  3. Mix the cream cheese in a bowl until smooth, adding sugar and vanilla.
  4. Fold in the diced peaches gently.
  5. Whisk together eggs, milk, salt, and cinnamon in a separate bowl.
  6. Assemble the dish by layering half of the croissant pieces, followed by half of the cream cheese mixture, and repeat.
  7. Pour the egg and milk mixture evenly over the top.
  8. Bake for about 30-35 minutes until golden brown and set.
  9. Cool for 10 minutes before slicing and serving.

Notes

Can be assembled the night before; just let it sit out for 30 minutes before baking. Leftovers can be frozen for up to three months.
