Shepherd’s Pie Casserole

A comforting and hearty Shepherd’s Pie Casserole made with ground beef, mixed vegetables, creamy mashed potatoes, and topped with melted cheddar cheese.

  • 2 lbs lean ground beef
  • 3 cups frozen mixed vegetables
  • 3 cups prepared mashed potatoes
  • 2 cups shredded cheddar cheese
  • 1 tsp thyme

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Brown the ground beef in a skillet over medium heat for about 5-7 minutes, then drain excess grease.
  3. Season and add the frozen mixed vegetables and thyme; cook for another 5 minutes.
  4. Layer the beef and vegetable mixture in a greased 9×13 inch baking dish.
  5. Top with dollops of mashed potatoes, spreading evenly.
  6. Add shredded cheddar cheese generously on top.
  7. Bake for 25-30 minutes until cheese is bubbly and golden brown.
  8. Cool for 5 minutes before slicing and serving.

Notes

Serve with a fresh green salad or roasted veggies. Garnish with sour cream or fresh parsley for an extra touch.
