Smash Burger Cornbread Pie

A delicious combination of a buttery cornbread crust and juicy smash burgers topped with gooey cheddar cheese—perfect for gatherings or weeknight dinners.

  • Cornbread Mix
  • 1 lb Ground Beef (80/20)
  • 1 cup Cheddar Cheese, shredded
  • 2 Eggs
  • 1 cup Milk
  • 1 small Onion, chopped
  • 1 tsp Garlic Powder
  • Salt and Pepper to taste
  • Additional seasonings (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the cornbread mix, eggs, and milk in a mixing bowl; stir until just combined.
  3. Heat a skillet over medium heat, add oil, and sauté the chopped onion until soft.
  4. Add the ground beef, breaking it apart with a spatula; season and cook until browned.
  5. Grease a 9×13 baking dish and pour half of the cornbread batter into it.
  6. Layer the beef mixture on top, followed by the cheddar cheese.
  7. Pour the remaining cornbread batter over the top.
  8. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  9. Let it rest for about 10 minutes before slicing.
  10. Serve warm, garnished with fresh herbs or toppings of choice.

Notes

For a vegan option, replace eggs with applesauce and use plant-based ground meat.
