Smoky Brisket Quesadilla Pie

A Flavorful journey combining tender brisket with gooey cheddar nestled between crispy tortillas.

  • 1 lb brisket, cooked or leftover
  • 4 large flour tortillas
  • 2 cups cheddar cheese, shredded
  • 1 tsp smoked paprika
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • Fresh cilantro (optional)

Instructions

  1. Prepare the brisket by shredding it into bite-sized pieces.
  2. Sauté onions in olive oil until golden-brown, about 5-7 minutes, then add garlic.
  3. Combine brisket, onions, garlic, smoked paprika, and half the cheddar in a bowl.
  4. Assemble the quesadilla pie in a greased pie dish, layering brisket mixture and tortillas.
  5. Bake at 375°F (190°C) for 25-30 minutes, until cheese is bubbly.
  6. Slice and serve garnished with cilantro and your favorite sides.

Notes

For a variation, swap brisket with sautéed vegetables for a vegetarian twist.
