Spinach Ricotta Casserole

A comforting and cheesy Spinach Ricotta Casserole that’s perfect for family dinners or impressing guests.

Ingredients

  • 16 oz ricotta cheese
  • 10 oz frozen spinach, thawed and squeezed dry
  • 2 eggs
  • 1½ cups shredded mozzarella
  • ½ cup grated Parmesan
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the thawed spinach by squeezing out excess moisture.
  3. Mix together the ricotta cheese, eggs, garlic powder, and half of the shredded mozzarella in a large bowl.
  4. Add in the prepared spinach, folding it gently into the mixture.
  5. Bake the mixture in a greased casserole dish (9×13 inches).
  6. Top with the remaining mozzarella and the grated Parmesan.
  7. Bake for about 30-35 minutes until the top is bubbly and golden.
  8. Let it rest for 10 minutes before serving.
  9. Serve on plates and enjoy!

Notes

For added protein, you can fold in cooked chicken or turkey. This casserole can also be made ahead and frozen for future meals.
