Turkey Sweet Potato Casserole

A comforting and nutritious Turkey Sweet Potato Casserole that’s perfect for any gathering.

  • 2 lbs lean ground turkey
  • 2 large sweet potatoes, diced
  • 1 cup diced onion
  • 2 cups spinach
  • 1 cup shredded mozzarella
  • 1 tsp smoked paprika

Instructions

  1. Preheat the Oven: Start by preheating your oven to 375°F (190°C).
  2. Cook the Sweet Potatoes: In a large pot, bring water to a boil. Add your diced sweet potatoes and let them cook for about 15 minutes, or until they’re fork-tender. Drain and set aside.
  3. Brown the Turkey: In a large skillet over medium heat, add a splash of olive oil and toss in your diced onions. Sauté them for about 5 minutes until they become translucent. Now add the ground turkey, breaking it apart with a wooden spoon. Cook it until it’s browned and cooked through, about 7–10 minutes.
  4. Add the Spinach: Once your turkey is browned, bring in the spinach. Stir it in and cook until it wilts down, about 2–3 minutes.
  5. Mix It All Together: In a large mixing bowl, combine the cooked sweet potatoes, turkey and spinach mixture, and half of the shredded mozzarella. Stir gently, making sure everything is well incorporated.
  6. Transfer to a Baking Dish: Pour the mixture into a greased 9×13 baking dish, spreading it evenly. Top with the remaining mozzarella.
  7. Bake: Cover the dish with aluminum foil and bake for 20 minutes. After that, remove the foil and bake for an additional 15 minutes or until the cheese is golden and bubbly.
  8. Cool and Serve: Let the casserole cool for a few minutes before serving.
