Parmesan Marry Me Chicken Pasta

A creamy pasta dish with tender chicken, sun-dried tomatoes, and parmesan, perfect for a romantic dinner.

  • 4 pieces Boneless, skinless Chicken Breasts
  • 1 cup Flour
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic, minced
  • 1 cup Sun-Dried Tomatoes, chopped
  • 1 cup Chicken Broth
  • 1 cup Heavy Cream
  • 1 cup Grated Parmesan Cheese
  • 1 tablespoon Italian Seasoning
  • Fresh Basil, for garnish
  • 12 oz Fettuccine or Penne

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides, then coat them in flour.
  2. Heat the oil in a large skillet over medium-high heat until shimmering.
  3. Cook the chicken for about 5-7 minutes per side until golden brown and cooked through. Set aside and keep warm.
  4. Sauté the garlic and sun-dried tomatoes in the same skillet for about 1 minute until fragrant.
  5. Add the chicken broth and scrape up any browned bits from the skillet.
  6. Stir in the heavy cream and bring to a gentle simmer, then add the parmesan and Italian seasoning until the cheese melts.
  7. Cook the pasta according to package instructions; reserve some pasta water.
  8. Toss the cooked pasta in the skillet with the sauce, adding reserved pasta water as needed.
  9. Slice the chicken, place it on top of the pasta, and garnish with fresh basil and more parmesan.

Notes

Serve with garlic bread and a crisp white wine like Chardonnay for a perfect meal pairing.
