Peach Coconut Chia Pudding

A creamy and delicious chia pudding bursting with the flavors of summer peaches and coconut milk, perfect for breakfast or dessert.

Ingredients

  • 1 cup coconut milk
  • 1/4 cup chia seeds
  • 2 ripe peaches, chopped
  • 1 to 2 tablespoons sweetener (optional)

Instructions

  1. Mix the Base: In a medium mixing bowl, combine coconut milk and chia seeds. Whisk until well combined.
  2. Sweeten It Up: Add in your chosen sweetener if desired and stir well.
  3. Prep the Peaches: Chop up the peaches into bite-sized pieces.
  4. Combine Everything: Gently fold the peach pieces into the chia mixture.
  5. Chill: Cover the bowl and refrigerate for at least 240 minutes or ideally overnight.
  6. Serve and Enjoy: Stir the pudding, scoop into bowls or jars, and top with extra peach slices or toppings as desired.

Notes

For a thicker pudding, use 1/3 cup chia seeds per cup of coconut milk. Can be kept in the fridge for up to 5 days.
