Homemade Peach Coconut Jam

A delightful Peach Coconut Jam that captures the essence of summer, perfect for spreading on toast or dolloping on desserts.

Ingredients

  • Fresh Peaches (about 2 pounds)
  • Coconut Milk (1 can, full-fat)
  • Sugar (1 cup)
  • Fresh Lemon Juice (1/4 cup)
  • Pectin (2 tablespoons, optional)

Instructions

  1. Wash your peaches thoroughly. Peel if you prefer a smoother jam, then cut into chunks.
  2. Combine the chopped peaches, sugar, and lemon juice in a large pot. Let sit for 10-15 minutes.
  3. Cook over medium-high heat, bring to a boil and let bubble for 10-15 minutes until thickened.
  4. Stir in the coconut milk and simmer for about 5 more minutes.
  5. Pour the jam into sterilized jars while hot, seal and cool upside down.

Notes

Use ripe peaches for optimal sweetness. For a spiced version, add a pinch of cinnamon or nutmeg.
