Peach Lemon Cookie Bars

Delightful Peach Lemon Cookie Bars with a chewy, buttery cookie base layered with luscious peach jam and a hint of tart lemon.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup light brown sugar
  • 2 large eggs (or 1 flax egg)
  • 2 tablespoons freshly grated lemon zest
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup peach jam (or apricot jam)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9 inch baking dish with butter or line it with parchment paper.
  3. Mix together 1 cup of softened butter, 1 cup of granulated sugar, and ½ cup of light brown sugar in a large mixing bowl until light and fluffy.
  4. Add the 2 eggs one at a time, mixing well between additions, and then stir in the lemon zest.
  5. Combine the flour, baking powder, and salt in a separate bowl, then gradually add to the wet mixture until just combined.
  6. Spread about two-thirds of the dough into the prepared baking dish.
  7. Spoon the peach jam over the cookie base evenly.
  8. Drop remaining cookie dough by dollops on top of the jam.
  9. Bake for 25-30 minutes, or until the edges are golden and center is set.
  10. Cool for 10-15 minutes in the pan, then transfer to a wire rack and cool completely before slicing.

Notes

Dust with powdered sugar before serving. Pair with vanilla ice cream for an extra treat.
