Pesto Grilled Cheese

Elevate your classic grilled cheese with vibrant pesto for a flavorful twist that’s perfect for any meal.

  • 2 slices of crusty bread
  • 1 cup shredded cheese (sharp cheddar, mozzarella, or pepper jack)
  • 2 tablespoons pesto
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder (optional)
  • Salt & pepper to taste

Instructions

  1. Gather your ingredients.
  2. Prep your bread by spreading butter on one side of each slice.
  3. Layer the cheese and pesto by placing cheese on the buttered side, spreading pesto, and topping with more cheese and the second slice of bread.
  4. Heat the skillet over medium heat.
  5. Grill the sandwich for 3-4 minutes until golden brown, pressing down slightly.
  6. Flip the sandwich and cook the other side for an additional 3-4 minutes until crispy.
  7. Check for cheese meltage; it should be oozy and delicious.
  8. Slice and serve hot.

Notes

Serve with tomato soup or salad. For extra flavor, consider adding roasted vegetables or protein.
