Ingredients

  • Pasta (any smooth, non-egg variety)
  • Olive oil
  • Garlic (minced)
  • Cherry tomatoes (halved)
  • Spinach (fresh or frozen)
  • Basil (fresh or dried)
  • Parmesan cheese (grated)
  • Red pepper flakes (optional)

Instructions

  1. Boil the Pasta: Fill a large pot with water, season it generously with salt, and bring it to a roaring boil. Toss in your pasta and cook according to package directions until al dente. Pro tip: Reserve about a cup of cooking water before you drain.
  2. Sauté the Garlic: While the pasta cooks, heat a good splash of olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. (Watch it closely; burnt garlic is not as delightful!)
  3. Add the Tomatoes: Toss in the halved cherry tomatoes and stir everything together. Cook for 3-4 minutes until the tomatoes slightly soften. Feel free to mash a few with your spoon for a rustic look.
  4. Incorporate Spinach: Gently fold in the spinach and allow it to wilt. If you’re using frozen spinach, make sure to thaw and drain it first; nobody wants a soggy dish!
  5. Combine Pasta: Add the drained pasta to the skillet along with a splash of reserved pasta water. Toss everything together until well coated. The starchy water helps create a lovely sauce. If you need to loosen it up, gradually add more cooking water bit by bit.
  6. Season: Stir in fresh or dried basil and sprinkle in some red pepper flakes if you’re feeling spicy! Taste and adjust seasoning as needed with salt and pepper.
  7. Finish with Cheese: Remove from heat and sprinkle in the grated Parmesan, folding it gently into the pasta. It’s the final touch that brings everything together—trust me!
  8. Serve Big and Bold: Dish up generous portions onto warm plates, adding an extra sprinkle of cheese and basil on top. Time to dig in!
