Cottage Cheese Ranch Rice Bowls

A comforting and flavorful dish featuring creamy cottage cheese, ranch seasoning, and tender chicken served over fluffy rice.

  • 1 cup uncooked rice (white or brown)
  • 1 lb chicken, cubed
  • 1 cup cottage cheese
  • 1 packet ranch seasoning
  • 2 tablespoons olive oil
  • 1 cup diced vegetables (bell peppers, broccoli, or spinach)
  • Salt and pepper to taste

Instructions

  1. Cook the rice in a medium saucepan with 2 cups of water to a boil. Add rice and a pinch of salt. Cover and reduce heat to low, simmer according to package instructions.
  2. Sauté the cubed chicken in a large skillet with olive oil over medium-high heat seasoned with salt and pepper for about 6-8 minutes.
  3. Add diced vegetables to the skillet and sauté for another 4-5 minutes until tender.
  4. Mix in cottage cheese and remaining ranch seasoning, stirring until combined and heated through.
  5. Assembly: Start with rice in a bowl, then top with chicken and cottage cheese blend.

Notes

Serve with fresh herbs or a squeeze of lemon juice for extra flavor.
