  • 8 oz Pasta (Spaghetti or Penne)
  • 2 tbsp Olive Oil
  • 45 cloves Garlic (Fresh, minced)
  • 1 can (14 oz) Canned Diced Tomatoes
  • 1/2 cup Heavy Cream
  • 1/4 cup Parmesan Cheese (Grated)
  • Fresh Basil Leaves (to taste)
  • Salt and Pepper (to taste)

Instructions

  1. Boil the Pasta: Start by bringing a large pot of salted water to a rolling boil. Once it’s bubbling, toss in your pasta of choice. Cook according to the package instructions until al dente, usually around 8-10 minutes.
  2. Sauté the Garlic: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once it shimmers, add minced garlic. Sauté for about 1 minute until fragrant.
  3. Add the Tomatoes: Next, add the diced tomatoes to the skillet. Stir well, and let it cook for 5-7 minutes until bubbling. Season with salt and pepper.
  4. Incorporate the Cream: Pour in the heavy cream and mix thoroughly, adjusting thickness with reserved pasta water as necessary.
  5. Combine the Pasta and Sauce: Once pasta is cooked and drained, add it to the skillet with the sauce. Toss until well coated.
  6. Finishing Touches: Add freshly grated Parmesan cheese and torn basil leaves, stirring gently to combine.

Notes

Serve with a light sprinkle of extra Parmesan and a few fresh basil leaves for garnish. Pairs well with garlic bread or a crisp green salad.
