Quick & Healthy Chicken Skillet

A vibrant and easy one-pan chicken dish loaded with colorful veggies and spices that’s perfect for a quick weeknight dinner.

  • 1 pound Boneless, Skinless Chicken Breasts
  • 2 tablespoons Olive Oil
  • 2 Bell Peppers (any color)
  • 1 medium Zucchini
  • 3 cloves Garlic (minced)
  • 1 tablespoon Italian Seasoning
  • Salt & Pepper to taste
  • 1 cup Chicken Broth
  • 2 cups Baby Spinach
  • Parmesan Cheese (optional, for topping)

Instructions

  1. Start by cutting your chicken breasts into bite-sized pieces. Season with salt, pepper, and half of your Italian seasoning.
  2. Grab a large skillet and heat your olive oil over medium-high heat until it shimmers.
  3. Toss in your chicken pieces. Let them sear without stirring for about 5-7 minutes until golden brown on one side. Flip them over and cook for another 5 minutes.
  4. Add the bell peppers and zucchini to the pan and cook for about 3-4 minutes until they start to soften.
  5. Once the veggies have softened, toss in your minced garlic and the remaining Italian seasoning. Sauté for about 1 minute.
  6. Pour in the chicken broth and scrape up any delicious brown bits off the bottom of the pan. Let it simmer for about 2-3 minutes.
  7. Stir in the baby spinach and cook until just wilted, about 1-2 minutes.
  8. If using Parmesan cheese, sprinkle it on top right before serving.
  9. Ladle the skillet mixture onto plates or a large serving dish and enjoy!

Notes

This dish can be served with rice or quinoa and garnished with fresh herbs for added flavor.
