Peach Cobbler Icebox Cake

  • Fresh peaches
  • 8 ounces cream cheese
  • 1 cup whipping cream
  • 1 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the peaches by washing, peeling, and slicing them into thin wedges or chunks.
  2. Make the filling by combining cream cheese and sugar in a bowl and beating until smooth. Fold in the whipping cream and vanilla extract.
  3. Layer the cake in a rectangular dish by alternating layers of crackers, filling, and peaches, finishing with a layer of filling on top.
  4. Chill the cake in the fridge for at least 4 hours or overnight.
  5. Serve the cake chilled, garnished with cinnamon or extra peach slices if desired.

Notes
