Raspberry Cheesecake Bites with Chocolate Crust

Delicious bite-sized raspberry cheesecake treats with a rich chocolate crust, perfect for gatherings and movie nights.

  • 1 cup (100g) chocolate cookie crumbs
  • 4 tablespoons (56g) unsalted butter, melted
  • 8 ounces (225g) cream cheese, softened
  • 1/2 cup (60g) powdered sugar
  • 1/4 cup (60ml) fresh lemon juice
  • 1 cup (150g) fresh raspberries
  • Optional toppings: Whipped cream and additional raspberries for garnish

Instructions

  1. Prepare the Chocolate Crust: In a medium bowl, mix the chocolate cookie crumbs with the melted butter until all the crumbs are moistened. Using a 9-inch square baking dish or a muffin tin, firmly press the crumb mixture into the bottom to form an even layer.
  2. Whip up the Creamy Cheesecake Filling: In a mixing bowl, beat the softened cream cheese until it’s smooth and creamy. Gradually add the powdered sugar and mix until combined, followed by the lemon juice.
  3. Fold in the Raspberries: Gently fold a cup of fresh raspberries into the cream cheese mixture.
  4. Assemble the Bites: Spoon the cheesecake filling over the chocolate crust and spread it evenly. Cover with plastic wrap and place in the fridge for at least 240 minutes.
  5. Serve and Enjoy: Cut into squares or scoop into individual servings, garnish with whipped cream and additional raspberries, then dig in!
