  • 1 lb boneless, skinless chicken breasts
  • ½ cup onion, diced
  • ¼ cup celery, diced
  • ½ cup frozen peas
  • 1 cup carrots, diced
  • ¼ cup flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 package Red Lobster Cheddar Bay Biscuit Mix
  • ½ cup shredded cheese (optional)

Instructions

  1. Prep the chicken by preheating your oven to 375°F (190°C). Season chicken breasts with salt and pepper. Cook in a skillet over medium heat for 5-7 minutes per side until golden brown. Dice into bite-sized pieces.
  2. Sauté the veggies in the same skillet, adding onions, celery, and carrots. Cook for about 5 minutes until tender, then add frozen peas.
  3. Create the sauce by sprinkling flour over veggies. Gradually add chicken broth and then heavy cream, stirring until thickened. Add chicken, garlic powder, thyme, salt, and pepper.
  4. Assemble the mixture in a baking dish, and prepare the biscuit mix according to the package instructions.
  5. Top the filling with biscuit batter and bake for 25-30 minutes until golden brown.
  6. Serve and enjoy after letting cool for 10 minutes.
