Lemon Chia Pudding

A delightful and refreshing lemon chia pudding that’s easy to make and perfect for breakfast or a healthy snack.

  • 1 ¼ cups milk of choice (almond, oat, or dairy)
  • ¼ cup chia seeds
  • Zest of 1 lemon
  • 23 tbsp fresh lemon juice
  • 12 tbsp maple syrup or honey (to taste)
  • Optional: vanilla extract or extra lemon zest for topping

Instructions

  1. Combine the milk of choice, chia seeds, lemon zest, lemon juice, and maple syrup in a bowl. Whisk until well-mixed.
  2. Let the pudding sit for about 5 minutes to allow chia seeds to soak up the liquid.
  3. Whisk the mixture again to prevent clumping. Cover with plastic wrap or transfer to jars.
  4. Chill in the fridge for at least 2 hours or overnight.
  5. Serve the pudding in bowls or jars, topped with garnishes such as lemon zest, fresh berries, or a drizzle of syrup.
