Slow Cooker Lasagna

A comforting slow cooker lasagna that combines rich flavors and layers of pasta, cheese, and marinara—perfect for busy weeknights.

  • No-boil or regular lasagna noodles
  • 15 oz ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 4 cups marinara sauce
  • 1 lb ground beef or sausage
  • 1 tsp Italian seasoning
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • Salt and pepper, to taste

Instructions

  1. Prep the ground meat: In a skillet over medium heat, brown the ground beef or sausage, about 6-8 minutes. Drain excess fat.
  2. Sauté the aromatics: Add chopped onions and minced garlic to the skillet, cooking until tender and fragrant, about 3-4 minutes.
  3. Mix your cheese: In a bowl, combine ricotta cheese, salt and pepper, and Italian seasoning until creamy.
  4. Layering time! Start by spreading marinara sauce on the bottom of the slow cooker, then add the first layer of noodles. Spread half the ricotta mixture, half the meat mixture, marinara, and mozzarella. Repeat layers.
  5. Set and forget: Cover and cook on low for 4-6 hours until noodles are tender and cheese is bubbly.
  6. Enjoy the amazing aroma: Let it sit for 10-15 minutes before serving.

Notes

To avoid a soggy lasagna, drain excess liquid from sauces and meats. Leftovers usually taste even better the next day!
