Small Homemade Macaroni Salad

A creamy, crunchy macaroni salad that’s perfect for potlucks, summer picnics, and family barbecues.

  • 1 cup elbow macaroni
  • 1/2 cup mayonnaise
  • 1/4 cup diced celery
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced onion
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the pasta by boiling a pot of salted water. Add the elbow macaroni and cook according to package instructions until al dente (about 7-8 minutes).
  2. Drain the macaroni in a colander and rinse it under cold water to stop the cooking process.
  3. Combine the cooled macaroni, diced celery, diced red bell pepper, and diced onion in a large mixing bowl.
  4. Make the dressing by mixing the mayonnaise, apple cider vinegar, salt, and pepper in another bowl.
  5. Mix the dressing with the macaroni and veggies, gently folding to coat evenly.
  6. Chill the salad in the fridge for at least 30 minutes before serving.

Notes

Feel free to add herbs or proteins to the salad for an extra twist. This dish tastes even better the next day as the flavors meld.
