Spicy Cucumber Salad

A refreshing and vibrant Spicy Cucumber Salad that adds a zing to your meals.

Ingredients

  • 4 medium-sized Cucumbers
  • 1 small Red Onion, thinly sliced
  • 1 cup Cherry Tomatoes, halved
  • 1/4 cup Fresh Cilantro, chopped
  • 1 Jalapeño, finely chopped
  • Juice from 1 large Lime
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Black Pepper, to taste
  • Optional: Sesame Seeds, for garnish

Instructions

  1. Wash the cucumbers thoroughly. Peel if using regular cucumbers, slice them in half lengthwise, and cut into bite-sized pieces.
  2. Thinly slice the red onion. Optionally, soak in cold water to mellow flavor.
  3. Halve the cherry tomatoes and add to a mixing bowl.
  4. Finely chop the jalapeño, adjusting seeds for desired spice level.
  5. Roughly chop the fresh cilantro.
  6. In the mixing bowl, combine cucumbers, onions, tomatoes, jalapeño, and cilantro, tossing gently.
  7. In a small bowl, mix olive oil, lime juice, salt, and black pepper until combined.
  8. Drizzle the dressing over the salad and toss until evenly coated. Taste and adjust seasoning if needed.
  9. Let the salad sit in the fridge for 15-30 minutes before serving for the flavors to meld.

Notes

For added flavor, consider including avocado or mango, or try adding canned tuna for a protein boost.
