Spinach Mushroom Pasta

A comforting dish featuring sautéed mushrooms and fresh spinach enveloped in a creamy Parmesan sauce.

Ingredients

Scale
  • 8 oz Pasta (spaghetti or penne)
  • 8 oz Fresh mushrooms (cremini or button)
  • 4 cups Fresh spinach
  • 2–3 cloves Garlic
  • 2 tbsp Olive oil
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese (freshly grated)
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Save about a cup of pasta water before draining.
  2. Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant. Toss in sliced mushrooms and cook until golden brown.
  3. Add Spinach: Stir in fresh spinach and let it wilt down.
  4. Create the Sauce: Reduce heat and pour in heavy cream. Stir to combine and add reserved pasta water to reach desired creaminess.
  5. Combine Everything: Toss drained pasta with the sauce and vegetables. Stir in Parmesan cheese until melted.

Notes

For a lighter version, substitute non-dairy cream and use whole grain pasta.
