Spinach Tortellini Salad

A vibrant and delicious salad featuring tender spinach tortellini, juicy cherry tomatoes, and fragrant fresh basil.

  • 8 oz Spinach Tortellini
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Fresh Basil, chopped
  • 4 oz Salami, diced (or substitute with mozzarella for vegetarian)
  • 2 tbsp Olive Oil
  • 1 tbsp Balsamic Vinegar
  • Salt & Pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Once boiling, add your spinach tortellini and cook according to the package instructions, usually around 3-5 minutes until they’re tender and floating.
  2. While your tortellini is cooking, chop the cherry tomatoes and roughly chop the basil.
  3. In a large bowl, combine the cooked and drained tortellini with the halved cherry tomatoes and chopped basil.
  4. Add the diced salami, drizzle the olive oil and balsamic vinegar over the mixture, and season with salt and pepper to taste.
  5. Gently toss everything together using a large spoon to ensure all ingredients are coated without squishing the tortellini.
  6. Enjoy! Serve immediately or chill for later.

Notes

Drizzle with extra olive oil or balsamic vinegar for added flavor. This salad pairs well with grated parmesan or toasted pine nuts.
