Strawberry Cheesecake Cookies

Delicious soft and chewy cookies filled with fresh strawberries and a creamy cheesecake center, perfect for a nostalgic treat.

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. Whisk together the flour, baking soda, baking powder, and salt in a medium bowl. Set aside.
  4. Beat the softened butter, cream cheese, granulated sugar, and brown sugar until smooth and creamy in a large mixing bowl.
  5. Add the egg and vanilla extract and mix until just combined.
  6. Gradually add the dry mixture to the wet mixture, mixing on low speed until combined.
  7. Fold in the diced strawberries and white chocolate chips if using.
  8. Scoop the dough onto the prepared baking sheet, leaving about 2 inches of space between each scoop.
  9. Bake for 12-15 minutes or until the edges are golden brown.
  10. Cool on the baking sheet for about 5 minutes before transferring to wire racks to cool completely.

Notes

Refrigerate the dough for 30 minutes before baking for chewier cookies. Feel free to adjust the amount of strawberries as desired.
