Strawberry Mocktail with Watermelon Ice

A refreshing and fun summer mocktail featuring strawberries and watermelon ice, perfect for gatherings.

  • 1 pound cleaned and hulled strawberries
  • 1 Liter (4 cups) coconut water
  • 1 lime, juiced
  • 1 tablespoon agave nectar
  • Watermelon ice cubes

Instructions

  1. Blend the Watermelon: Start by cutting a ripe watermelon into chunks, removing any seeds if necessary. Toss about 3-4 cups of watermelon into your blender. Blend until smooth and pureed.
  2. Freeze the Watermelon Puree: Pour the watermelon puree into ice cube trays. Pop those in the freezer for at least 240-360 minutes or overnight if you want to plan ahead.
  3. Prep the Strawberries: Rinse the strawberries under cool water. Remove the green tops and toss them into a blender or food processor.
  4. Blend to a Puree: Blend the strawberries until you achieve a smooth puree consistency. If it’s too thick, add a splash of coconut water until it reaches your desired consistency.
  5. Mix it Up: In a large pitcher, pour the strawberry puree, coconut water, lime juice, and agave nectar. Give it a gentle stir with a spoon until thoroughly combined.
  6. Grab your frozen watermelon ice cubes from the freezer and fill your glasses with them.
  7. Pour in the Mix: Carefully pour the strawberry-coconut mixture over the watermelon ice cubes until the glasses are full.
  8. Add a whole strawberry or a sprig of mint for garnish. Serve immediately!
