Strawberry Oatmeal Bars

Delightful Strawberry Oatmeal Bars, perfect for a sweet snack or dessert, blending oats and fresh strawberries for a comforting treat.

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and chopped
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9-inch baking pan or line with parchment paper.
  3. Mix the rolled oats, flour, brown sugar, baking soda, salt, and cinnamon in a large bowl.
  4. Add the melted butter and vanilla extract to the dry mix and combine until it resembles coarse crumbs.
  5. Fold in the chopped strawberries gently.
  6. Press half of the oat mixture evenly into the bottom of the prepared pan.
  7. Spread the remaining oat mixture crumbling it over the strawberries.
  8. Bake for 25-30 minutes or until golden brown.
  9. Cool for 10-15 minutes before slicing into squares.

Notes

Store leftovers at room temperature for 2-3 days or refrigerate for up to a week. They can also be frozen for later enjoyment.
