Strawberry Peach Mojito Jam

A delightful blend of strawberries and peaches with refreshing mint and lime, capturing the essence of summer in a jar.

  • 4 cups of ripe strawberries
  • 4 cups of ripe peaches (peeled and diced)
  • 1 cup of fresh mint leaves
  • 1 cup of sugar
  • 1/4 cup of fresh lime juice
  • 1 pouch (1.75 oz) of fruit pectin (like Sure-Jell)

Instructions

  1. Prepare your ingredients by washing the strawberries and peaches thoroughly, removing stems, and dicing them.
  2. Mash the fruits in a large mixing bowl using a potato masher or fork until chunky.
  3. Mix in the sugar, lime juice, and chopped mint leaves, stirring until the sugar dissolves and letting it sit for 10-15 minutes.
  4. Cook the mixture in a large pot over medium heat, bringing it to a boil while stirring. Add fruit pectin and boil for 5-10 minutes until thickened.
  5. Jar the hot jam into sterilized mason jars, leaving 1/4 inch space, and wipe rims clean.
  6. Process the jars in a boiling water bath for 10 minutes to preserve the jam.
  7. Let the jars cool on a towel or rack and allow the jam to set for at least 24 hours before sampling.

Notes

Use fresh ingredients for the best flavor. Pectin is essential for the right jam consistency.
